Cinnamon Swirl Coffee Cake

The Clabber Girl Baking Mix is easy to prepare ahead of time and can be used in a wide variety of ways, including this recipe for a delicious cinnamon swirl coffee cake.

Cake Batter:

  • 1/2 C. (one stick) butter
  • 3 eggs
  • 3 C. Baking Mix
  • 3/4 cup firmly packed brown sugar
  • 1/2 tsp. apple pie spice
  • 1 C. buttermilk
  • 1 tsp. vanilla

Cinnamon Crumb Mixture:

  • 1 C. firmly packed brown sugar
  • 1/4 C. all-purpose flour
  • 1 tsp. cinnamon
  • 1/4 C. (half stick) butter


Cinnamon Crumb Mixture:

  1. Combine brown sugar, flour and add cinnamon. 

  2. Cut in butter until mixture becomes crumbly; set aside.

Cake Batter:

  1. Preheat oven to 350° F. Grease a fluted tube pan; set aside.
  2. In a large bowl, cream together butter and eggs. Combine Baking Mix, brown sugar and apple pie spice; blend thoroughly. Add buttermilk alternately with flour mixture. Stir in vanilla. Batter will be thick. Spoon half the batter into the tube pan; sprinkle half the cinnamon crumb mixture on top of batter. Add remaining batter and top with remaining crumb mixture.

  3. Bake for 1 hour. Allowing cooling for at least 5 minutes then invert tube pan to release cake onto serving plate. Cool and slice.
